Ingredients
- Vegetables: 2 medium sweet potatoes, peeled and cut into 1 inch cubes, 450 g (1 lb) Brussels sprouts, trimmed and halved, 1 medium red onion, sliced
- Meats: 4 Italian sausages (about 350–400 g / 12–14 oz), cut into 2 inch pieces
- Spices & Seasonings: 2 tbsp olive oil, 1 tsp smoked paprika, 1 tsp dried thyme, ½ tsp garlic powder, ½ tsp salt, ¼ tsp black pepper
- Garnish (optional): 2 tbsp chopped fresh parsley
Instructions
- Step 1:
- Preheat oven to 220°C (425°F). Line a large rimmed baking sheet with parchment paper for easy cleanup.
- Step 2:
- In a large bowl, toss sweet potatoes, Brussels sprouts, and red onion with olive oil, smoked paprika, thyme, garlic powder, salt, and black pepper until evenly coated.
- Step 3:
- Spread the vegetables in a single layer on the prepared baking sheet. Nestle the sausage pieces among the vegetables.
- Step 4:
- Roast for 25–30 minutes, stirring halfway through, until the vegetables are tender and caramelized and the sausages are cooked through (internal temp 74°C/165°F).
- Step 5:
- Remove from oven. Garnish with fresh parsley before serving, if desired.
