# How to Make It:
01 - Preheat the oven to 425°F. Line a large rimmed baking sheet with parchment paper to facilitate cleanup.
02 - In a large bowl, combine sweet potatoes, Brussels sprouts, and red onion. Add olive oil, smoked paprika, dried thyme, garlic powder, salt, and black pepper. Toss until vegetables are evenly coated.
03 - Spread the seasoned vegetables in a single layer on the prepared baking sheet. Nestle the sausage pieces evenly among the vegetables.
04 - Roast in the oven for 25 to 30 minutes, stirring halfway through cooking. Continue until the vegetables are tender and caramelized, and sausages reach an internal temperature of 165°F.
05 - Remove from oven and sprinkle with chopped fresh parsley if desired before serving.
