04 - Scatter tomatoes evenly over the bread slices.
05 - Crumble or slice feta cheese and distribute over the tomatoes.
06 - Drizzle remaining olive oil over each toast.
07 - Bake for 15–18 minutes, until the bread is golden and the feta is softened and lightly browned.
08 - Remove from oven, top with fresh basil, and serve warm.

# Additional Tips::

01 -
  • The feta gets beautifully soft and creamy in the oven, melting just enough to coat the bread without disappearing entirely.
  • It's ready in 30 minutes, making it perfect for when you want something special but don't have the energy for a full project.
  • Tastes like a Mediterranean vacation condensed onto a single piece of toast, and impresses guests without making you look stressed.
02 -
  • Don't be tempted to skip the parchment paper, because the bottom of the bread can stick and scorch, turning bitter and ruining the whole thing.
  • The feta will continue to cook slightly after you remove it from the oven, so pulling it out when the cheese is just starting to brown gives you that perfect creamy texture without it becoming too firm.
03 -
  • Use room-temperature or slightly chilled feta straight from the block rather than pre-crumbled, as it holds together better and creates those creamy pockets you're looking for.
  • Toast your bread lightly before adding toppings if you like extra crunch, or keep it soft for a more delicate bite, depending on your preference.
